We have rarely been so divided about whether we want to include an article in the shop or not:
The extravagant handle is initially irritating and the overall impression is so dominant that it is difficult to approach the knife on a different level.
It is actually the great blades that should be the focus:
3 layers of steel - the middle layer of the blade is hard and brittle, the outside is softer and therefore flexible. This is relatively rare to find.
The upper part of the blade towards the back of the knife has a subtle hammer-effect structure, effectively preventing damp cuttings from sticking to the blade.
This also looks pretty good, by the way.
The most beautiful detail on the whole knife, however, is certainly the "silver line" at the front of the blade (we'll just call it that for lack of a better name), that leisurely meandering line at the hand-ground transition between the layers of steel - the signature of the experienced knife sharpener, and thus a direct, visible and, above all, high-quality connection to the craftsman behind the otherwise flawless industrial product.
Pretty cool when you think about it.
And now for the handle.
Man, man, man. Very extravagant indeed.
But you get used to it.
And ergonomically, there is not much to criticise about the handle, on the contrary:
The hollow handle is filled with fine sand, carefully balancing the entire knife at the grip.
This means that even the large knives can be moved easily and place little strain on the wrist. Perfect.
Real advantage of the streamlined design as well as the exclusive use of stainless steel and seamless processing:
The knives are easy to clean and always appear very hygienic.
Bottom line:
Very distinctive, high-quality knives with impressive blades and well-thought-out details.
And maybe the Global SAI is one of the products that needs some time in the relationship:
While they initially felt like foreign objects, we find ourselves holding a Global SAI in our hands more and more often in everyday life, especially the large blades, and especially the Santoku:
Somehow the silvery shimmering, weightless aesthetic is seamlessly continued in the feel - the polished stainless steel in the hand is full of smooth, vibrating energy and you have the feeling of cutting particularly “well”.
Kind of crazy, but quite apt.
