Iron pans
Classic iron pans for everyday use - especially designed for high temperature ranges, as the pans can get very hot.
Iron pans are a little more demanding to handle in everyday life: the pan must be "burned in"* before it is used for the first time and the resulting patina must be cared for from time to time - not particularly complex, but necessary.
For us, iron pans were a very worthwhile learning curve, especially the construction and care of the patina gives you the feeling of having a truly "own" pan.
In the overall context, iron pans should be seen as a supplement for special purposes - in everyday life, coated pans are superior due to their simplicity.
*In other words: The pan must be heated up with oil to seal the steel surface and prevent the food from sticking. Depending on the type of pan, this takes about 15-30 minutes and not much can go wrong.

Just like the black pans, the iron pans from deBuyer are very pleasant to use in everyday life - and make an even more ambitious impression than the coated pans.
The light wooden handle with stainless steel rivets certainly contributes a lot to this, as it performs its function as a "touch point" in the original sense of the word very elegantly and ensures pleasant haptic impressions every time it is used.
The contrast of the silvery-black pans (after firing) with the almost white beech wood is also visually very long-lasting and really homely and traditional.
The cranked handles ensure that the pans can be placed straight inside each other - this way you can store all your pans neatly in one place, and we think that's very clever.
But what makes the pans most attractive to us is the thoughtful reduction to the simplest shapes and parts - the pans impress with their simplicity and the absence of disturbing details.
We usually only see this simplicity in professional kitchens, and you can tell from the pans that deBuyer actually produces for upscale restaurants.

Note: The metal layer between the wooden handles as well as the rivets on the wood can also get very hot in some cases - especially if you forget the pan on the stove. If in doubt, please hold the handle with an intermediate layer (pit cloth or similar).
