Just between us: Solingen knives have a good reputation, but are often anything but exciting and in some cases even somewhat insensitive when it comes to design and material combinations.

A refreshing exception is the Alpha series from the traditional forge Güde, which with traditional design, sensitive material combination, and highest manufacturing quality is probably like no other series the epitome of the "German kitchen knife" and yet appears light and modern due to its confident style.

Common to all knives is the elegantly shaped handle with smoothly guided lines and the triple-riveted handle scales made of radiant olive wood.
Depending on the type of knife, the size and weight of the handle vary, giving each knife a noticeable character, from power-emphasizing hand fullness to surgical precision.
The consistent proportions always emphasize the belonging of the individual knives to the product family.

A particular highlight is definitely the striking decorative rivet with the Güde palm logo in the center of the handle shell, and it must be admitted frankly:
It’s exactly the right detail in the right place – wonderfully precise branding. Bravo!

 

Overall, the knives of the Alpha series stand out for their fine overall impression and skillfully balanced contrasts:
The archetypal traditional shape meets modern, precisely worked stainless steel, the lightness of the material combination meets solid weight, and the simple, functional impression is complemented by the highest quality craftsmanship.

 

All Güde knives are forged in the traditional way in a die and go through about 50 purely manual work steps – despite their modern appearance, the Alpha knives are traditional handcrafted products in the best sense of the word.
The exclusively handmade processing can be seen in small details: sometimes a line doesn’t perfectly connect to another, sometimes a transition isn’t completely symmetrically polished.
However, the knives are crafted so flawlessly overall that these small manufacturing details actually highlight the outstanding quality and make the craftsmanship truly tangible.

OUR SELECTION

From the fairly extensive series, we have only selected about half of the knives for our range, as the differences and special added value beyond that become quite vague.
Here is our detailed presentation:

X805/21cm: Large chef’s knife
Heavy-duty work knife with a long 21cm blade, hand-filling handle, and solid pommel, balanced on the front handle rivet. Very solid feel, ideal for tougher, power-intensive kitchen tasks and larger quantities.

X805/16cm: Medium chef’s knife
Medium-sized work knife with a sturdy 16cm blade, also balanced on the front handle rivet.
Solid feel in hand but also agile – a nice all-round knife for various uses.

 

X764 - 8 /13cm Utility knife
Small cutting tools with delicate handles for detailed cutting tasks.
Weight is slightly shifted toward the middle rivet of the handle.

 

X703/06 Paring knife
One of our favorites: The small paring knife with the curved blade is simply a great all-purpose knife for delicate work.

 

X840/18 Chinese chef’s knife
Classic vegetable knife inspired by Chinese design. Handling takes some practice, but it’s worth it. 

The handle is surprisingly narrow compared to the blade, which is initially unusual but allows for precise cutting control and prevents misuse as a cleaver.

 

X430/21 cm Bread knife
The famous scalloped edge – now probably the worldwide standard for bread knives – was actually developed by Franz Güde, the founder’s son.

 

X055/26 cm Honing steel
Surprisingly: The honing steel is almost the most beautiful piece in the entire series.

CARE INSTRUCTIONS:
- Not dishwasher safe (like all knives)
- Ideally sharpen briefly with the honing steel before each cooking session
- Occasionally treat wooden handle with wood oil, let soak for 30 minutes, then polish with a cloth
